Easy Simple Potato Salad

This is how we grew up eating potato salad and it’s such a simple but delicious way .

All you need for this version is :

Potatoes

Scallions / Green Onions

Bacon

Mayonaise

Salt & Pepper

Peel, cut and boil your potatoes .

While they are cooking get your bacon pieces on .

I cut up mine to make it easy but fresh but you could cook then chop or you could use store bought bacon pieces .

Rinse and dice your scallions I use green and white side .

When potatoes and bacon are done mash them together .

Let cool then add the scallions & mayonnaise.

I don’t like too much Mayo just enough to wet it and make it creamy . Then season with salt and pepper and bobs your uncle !
