Maple & Bacon Pancake Bites

Preheat oven to 350°F

Spray mini muffin tin with non stick spray.

In a bowl mix together your homemade or your favorite pancake mix according to the package instructions.

Fill each mini muffin tin 1/2 of the way full of pancake mix. Bake at 350 degrees for 10 minutes. While they are baking I fry bacon pieces till crispy and perfect.

Take your pancake bites out pour over your maple Glaze and top with bacon .

Maple Glaze ;

3 Tablespoons unsalted butter

⅓ cup maple syrup

½ teaspoon vanilla extract

1-1 ½ cups powdered sugar , plus more if needed

Pinch salt.

In a small saucepan, melt the butter over medium heat. Whisk in the maple syrup until melted. Remove from the heat. Whisk in the vanilla, powdered sugar, and salt until smooth.
