Quick vegetarian summer lunch idea 🍋🌽🥒

This pasta came together with leftovers in my pantry and fridge, but it’s so good I’ve had it two days in a row!

I N G R E D I E N T S

-serving of red lentil pasta

-one zucchini, diced

-frozen corn (I used the roasted one from Trader Joe’s)

-goat cheese

-olive oil

-lemon juice

-salt

-pepper

-garlic

Prepare red lentil pasta, drain, and toss with oil, goat cheese, and salt and pepper to taste. While the pasta cooks, toss the zucchini and corn with oil, salt, pepper, and garlic powder and air fry until crisp. Once the pasta and veggies are done, combine and dig in!
