Ingredients:
1 lb boiled shrimp, peeled and deveined, chopped into bite-sized pieces
1 jalapeño diced *remove seeds* for mild
1 medium red onion sliced & diced
1 cucumber, peeled, seeded, and diced
3 medium Roma tomatoes, diced
Juice of 8 limes
1/2 cup chopped cilantro
Coarse sea salt, to taste
Instructions:
Combine Ingredients: In a large bowl, mix together the chopped shrimp, red onion, cucumber, and tomatoes.
Add Lime Juice: Pour the lime juice over the mixture. The acid from the lime juice helps to "cook" the shrimp and blend the flavors.
Season: Add coarse sea salt to taste, and mix well.
Add Cilantro: Stir in the chopped cilantro for a fresh flavor boost.
Chill: Cover and refrigerate for at least 30 minutes to allow the flavors to infuse!
