Beef Enchiladas
Ingredients:
2 1/2 pound Chuck beef roast (fully cooked and shredded)
3 cups of any cheese
Tortilla Wraps
Green Enchilada Sauce
Sliced Black Olives
Taco or Enchilada seasoning
How I made it:
Fully cook roast and shred thinly, separating the meat from any fat. Add 2 cups of cheese to shredded roast and mix with 1 cup of enchilada sauce, adding taco or enchilada seasoning. Mix throughly. Take your wrap, put one spoonful of meat and cheese mix in wrap, place in baking pan and continue until there is no more meat and cheese mixture. Put olives on top of cheese.
Preheat oven to 350 degrees.
Cover enchiladas in pan with remaining green enchilada sauce, place in the middle of the top rack in the oven.
Bake until cheese is golden brown and bubbly all the way through.
Absolutely amazing!! Serve with sour cream, red sauce, taco sauce or anything you want!
