sharing 5 of my favorite better-for-you christmas treats 😍
💌 christmas tree brownies
ingredients👇🏼
» 2 large sweet potatoes (trust me you don’t taste them, they’re just for moistness & texture)
» 3/4 cup maple syrup
» 1 cup oat flour (i blend oats in a blender)
» 1/4 cup cocoa powder
» 2 tbsp jet black cocoa. if you don’t have this ingredient, just add 2 more tbsp of regular cocoa powder
» 2 eggs
» 2 tbsp olive oil
» 1 tsp baking powder
» 1/2 tsp salt
» 1/2 cup chocolate chips
frosting:
» 1/2 cup vanilla greek yogurt
» 1 scoop vanilla protein powder
» 1/3 cup light cool whip
» a few drops green food dye
toppings:
» mini candy canes
» holiday sprinkles
how to👇🏼
1) preheat your oven to 350°F
2) put your sweet potatoes on a microwave safe plate
3) with a fork, stab each sweet potato about 10 times
4) microwave the sweet potatoes together for 8-10 mins until fully cooked
5) while the sweet potatoes are in the microwave, mix your oat flour, salt, baking powder, and cocoa powder in a bowl until well combined
6) grease an 8x8 baking sheet with cooking spray
7) when your sweet potatoes are done cooking, scoop the insides out into a bowl separate from the dry ingredients
8) add in your oil, maple syrup, vanilla, & eggs
9) beat the wet ingredients with a mixer for 2 mins or mix by hand with spatula/whisk
10) add in dry ingredients and beat/mix until well combined
11) fold in chocolate chips
12) pour batter into your pan
13) bake for 35 mins
14) let cool for 15 mins
15) cut into triangles
16) decorate as pictured with toppings
💌 peppermint protein cake
ingredients👇🏼
» 1/4 cup oats
» 1/2 scoop vanilla protein
» 1 tbsp greek yogurt
» 1/4 tsp peppermint extract
» 1/2 tsp baking powder
» pinch of salt
» 1/4 cup milk of choice
» 1 tbsp jet black cocoa
» optional: crushed candy cane garnish & chocolate chips for mix ins
how to👇🏼
1) add all ingredients to a blender
2) blend under a batter is formed
3) add any mix-ins you choose
4) put batter in a greased ramekin
5) bake for 20 mins at 375°F
6) let cool for 10 mins & enjoy
💌 sugar cookie protein dip
ingredients👇🏼
» 1 cup vanilla greek yogurt
» 1 scoop vanilla protein
» 1/4 cup maple syrup or honey
» 1/2 cup nut butter of choice
» 1/2 tsp vanilla extract
» 1/2 tsp almond extract
» 1/4 tsp salt
» 1/8 tsp cinnamon
» 1 tbsp milk of choice
» sprinkles (measure with luv)
» dippers of choice! (i use a mixture of 🍎 & 🥨 because that’s what i like)
how to👇🏼
1) mix all ingredients in a bowl
2) dip with dippers
💌 grinch protein pancakes
ingredients👇🏼
» 1/3 cup oat flour (i blend oats)
» 1 ripened banana
» 1 egg
» 3/4 scoop of your fav protein
» 1 tsp baking powder
» 1/4 tsp almond extract
» 1 tsp matcha powder for green color (green food dye works too)
» milk of choice until you get your desired thickness
» your favorite pancake mix-ins (you can do blueberries or whatever you like best... i went for choc chips 🤗)
» any toppings your heart desires!!!! (i went with some more choc chips, banana slides, raspberries + almond milk whipped cream)
how to👇🏼
1) pop all ingredients except for toppings in a blender to form a batter
2) in a greased pan, make ~8 inch sized pancakes flipping to cook both sides
3) let cool for 3 mins
4) top as you wish!
💌 reindeer pretzels
ingredients👇🏼
» mini pretzels
» mini peanut butter cups, halved (i use reese’s dark choc)
» mini m&ms
» candy eyes
how to👇🏼
1) preheat oven to 350°F
2) place pretzels on a parchment sheet
3) add a half of a pb cup to each pretzel (a whole one won’t melt well) & pop in the oven for ~4 mins
4) while they’re in the oven, chop pretzels in half to use for antlers
5) add antlers, eyes and an m&m nose to the melted pb cup straight out of the oven
6) let them cool for at least 15 mins
