as a pumpkin hater (sorry LOL) i really lean into cinnamon roll / all things cinnamon during fall to feel the ~vibes~
sharing the recipe for my INSANELY DECADENT cinnamon roll protein pancakes topped off with a vanilla protein frosting that’s to DIE FOR!!! these also leave your entire kitchen smelling amazing for the rest of the day 🫶🏼
the recipe makes 3 medium sized pancakes for 2 people with 40g protein in each stack!
pancakes ingredients👇🏼
🍂 180g kodiak cakes powercakes mix
🍂 52g vanilla protein pow (using pescience cake pop)
🍂 1/3 cup water
cinnamon filling ingredients👇🏼
🍂 90g i can’t believe it’s not butter light
🍂 90g coconut sugar
🍂 1 1/2 tbsp cinnamon
frosting ingredients👇🏼
🍂 25g vanilla protein pow (using pescience cake pop)
🍂 6 tbsp milk of choice
🍂 1/4 tsp vanilla
method👇🏼
1) cream butter, sugar, and cinnamon until combined. put in a plastic bag & chill
2) mix protein powder, milk, and vanilla for frosting in a bowl and put in a plastic bag & chill
3) in a bowl, whisk protein powder and kodiak cakes until combined for pancakes. add water & mix until batter forms - you can add more water if you need
4) in a greased pan, add pancake batter to make a large pancake
5) cut the corner off of the plastic bag with the cinnamon filling & pipe onto pancake while it’s in the pan in a circular fashion
6) flip the pancake until holes form & cook on the other side
7) repeat the process until all pancakes are made
8) cut the corner off of the plastic bag with the frosting & pipe into pancakes for topping
9) enjoy!
