no i’m not joking. i’ve always made simple, easy meals for myself that didn’t take longer than 15 minutes to make. other than that i would go buy food. it’s just me in the house, so it didn’t wear on my budget much. as i’ve started on a weight loss journey, it’s gotten harder to eat out. everything is fried, drowned in a fatty sauce, or costs $20 for a single serving. no thanks!

so this week i tried making my own roasted chicken! on the first day, it came out the same as baked chicken. it tasted fine, but the skin didn’t have the crispy texture i was looking for. the next day i increased the temperature and the amount of time i left the chicken in the over, and viola! crispy skin. i made some steamed kale to go along with it (gotta get those greens in). i love ice cream, but i’m trying to eat it less, so i made a smoothie. it’s mango pineapple juice blended with strawberries, pineapple, and mango, and peaches.

for breakfast i had my classic yogurt bowl one day (scroll down my page to see) and a turkey egg and cheese bagel. i prefer a hot breakfast and this was so good! and doesn’t take a lot of work to cook. you basically only have to cook the egg. toasting the bagel and heating the turkey are optional, but i know they make the sandwich what it is. i added apricot jam on the bagel before putting the other ingredients on, and that gave the perfect savory sweet combination. it almost makes you forget that you wanted donuts instead!
