Mashed Purple Sweet Potatoes

Okay I know these look crazy but trust me they’re so good!! Made them as a side dish on Christmas eve

Ingredients:

3 large purple sweet potatoes

full fat Coconut milk

veggie broth

4 garlic cloves

1.5 tbsp olive oil

salt

Black pepper

2 tsp Thyme

2 tap Rosemary

Steps:

Boil potatoes for about 15 mins or until tender

While boiling, add 1/2 tbsp of olive oil to a pan and chopped garlic cloves, cook until golden

Add potatoes &cooked garlic into a blender with 1/4 cup veggie broth and spices; blend slowly adding in coconut milk until creamy (I only had to use a little bit)

Season more with salt if needed
