1. Classic French Omelet

Ingredients:

• 3 eggs

• Salt and pepper to taste

• 1 tablespoon butter

• Fresh herbs (e.g., parsley, chives, tarragon), finely chopped

Instructions:

1. Beat Eggs: In a bowl, beat the eggs with a pinch of salt and pepper until well combined.

2. Heat Pan: Heat butter in a non-stick skillet over medium-low heat until it melts and begins to foam.

3. Cook Eggs: Pour the eggs into the pan and gently stir with a spatula, shaking the pan occasionally to allow the eggs to cook evenly.

4. Form the Omelet: When the eggs are mostly set but still slightly runny on top, stop stirring and let them cook for another 30 seconds.

5. Fold and Serve: Sprinkle fresh herbs on top, fold the omelet in half, and slide it onto a plate. Serve immediately.

2. Vegetable Omelet

Ingredients:

• 3 eggs

• Salt and pepper to taste

• 1 tablespoon olive oil or butter

• ¼ cup diced bell peppers

• ¼ cup chopped spinach

• ¼ cup diced tomatoes

• ¼ cup shredded cheese (cheddar or mozzarella)

Instructions:

1. Beat Eggs: In a bowl, beat the eggs with salt and pepper.

2. Cook Vegetables: In a skillet, heat oil over medium heat. Sauté bell peppers, spinach, and tomatoes for 3-4 minutes until soft.

3. Add Eggs: Pour the beaten eggs over the cooked vegetables.

4. Add Cheese: Sprinkle cheese on top and cook until eggs are set.

5. Fold and Serve: Fold the omelet in half and serve hot.

3. Spanish Omelet (Tortilla Española)

Ingredients:

• 4 eggs

• Salt to taste

• 3 medium potatoes, thinly sliced

• 1 onion, thinly sliced

• ½ cup olive oil

Instructions:

1. Cook Potatoes and Onion: Heat olive oil in a skillet over medium heat. Add potatoes and onions, cooking until soft but not browned, about 15 minutes. Drain excess oil.

2. Beat Eggs: In a bowl, beat the eggs with salt. Add the potato mixture and combine.

3. Cook Tortilla: Return the mixture to the skillet over medium heat. Cook until the bottom is set, then flip and cook the other side until fully set.

4. Serve: Slide onto a plate, cut into wedges, and serve warm or at room temperature.

4. Mushroom and Cheese Omelet

Ingredients:

• 3 eggs

• Salt and pepper to taste

• 1 tablespoon butter

• ½ cup sliced mushrooms

• ¼ cup shredded Gruyère or Swiss cheese

Instructions:

1. Sauté Mushrooms: In a skillet, melt butter over medium heat. Add mushrooms and cook until browned and tender.

2. Beat Eggs: Beat eggs with salt and pepper.

3. Cook Omelet: Pour eggs into the skillet with mushrooms. Cook until eggs are set on the bottom.

4. Add Cheese: Sprinkle cheese over half of the omelet.

5. Fold and Serve: Fold the omelet in half and serve immediately.

5. Southwest Omelet

Ingredients:

• 3 eggs

• Salt and pepper to taste

• 1 tablespoon butter or oil

• ¼ cup cooked black beans

• ¼ cup corn kernels

• ¼ cup diced tomatoes

• ¼ cup shredded Monterey Jack cheese
