Ingredients:
• 2 lbs. pork belly slices
• 1/3 cup soy sauce or coconut aminos
• 3 Tbsp. honey
• 2 Tbsp. sesame oil
• 1 Tbsp. rice or apple cider vinegar
• 4 cloves garlic, minced
• 1 Tbsp. sriracha or other hot sauce
• 1/2 tsp. smoked paprika
• 1/4 tsp. each salt and pepper
• Wooden skewers (if using wooden skewers, soak in water for at least 30 minutes prior to use)
Steps:
1. Prepare the marinade by combining soy sauce, honey, sesame oil, vinegar, sriracha, minced garlic, paprika, salt, and pepper in a bowl.
2. Place the pork belly rib slices in the marinade, ensuring each piece is fully coated. Marinate in the refrigerator for 1 to 18 hours to enhance the flavor.
3. Once marinated, remove the pork slices from the fridge. Start making the skewers by taking a slice and folding it.
4. Preheat your grill or oven or Air fryer to medium-high heat (around 400°F if using an oven). For grilling, place skewers directly on the grill, turning occasionally, until the pork is thoroughly cooked and slightly charred, about 10-15 minutes. If using an oven, place the skewers on a wire rack over a baking sheet and bake at 400°F for 20 minutes, then flip and cook for an additional 10-15 minutes or until the internal temperature reaches 145°F (63°C).
5. Allow the skewered pork belly slices to rest for a few minutes before serving.
