Delicious Vegan Meatball Subs

Ingredients:

- 1 block firm tofu

- 1 can of white beans

- 1 can of chickpeas

- Cumin

- Garlic powder

- Onion powder

- Fresh garlic, chopped

- Chives, chopped

- Basil, chopped

- Tomato paste

- Chickpea flour

- Browning sauce or soy sauce

- Salt & pepper to taste

- Marinara sauce (store-bought is just fine!)

- Hoagie Rolls

#### Directions:

1. **Prepare the Meatball Mix:**

- In a food processor, combine the white beans, chickpeas, cumin, garlic powder, onion powder, fresh garlic, chives, basil, tomato paste, chickpea flour, browning sauce (or soy sauce), salt, and pepper. Blend until smooth and well combined.

- Crumble the firm tofu into the mixture and stir until evenly distributed.

2. **Test and Shape the Meatballs:**

- Cook a small piece of the mixture to taste and adjust the seasoning if necessary.

- Scoop out the mixture and roll it into nice round balls. Place the meatballs in the fridge for a few minutes to firm up while you prepare the marinara sauce.

3. **Cook the Meatballs:**

- Sear the meatballs in a pan with avocado oil until they are golden brown.

- Transfer the seared meatballs to the oven and finish cooking them with your marinara sauce (store-bought works great if you don't want to make your own).

4. **Prepare the Hoagie Rolls:**

- Toast your gluten-free/vegan hoagie rolls.

- Melt some vegan butter and mix in garlic, cilantro, and basil. Coat the inside and outside of the warm rolls with this mixture.

5. **Assemble the Subs:**

- Add the saucy meatballs to the hoagie rolls.

- Spoon more marinara sauce over the meatballs if you like them extra saucy.

- Sprinkle vegan Parmesan and add sliced vegan cheese on top (use any vegan cheese you prefer if you can't find vegan mozzarella).

- Bake the subs in the oven just until the cheese melts.
