Arroz blanco con Elote (Mexican rice-white)

1 C. Basmati rice-rinsed (you can use long grain but keep in mind you may have to cook rice in butter longer before adding water)

2 tbsp butter

1/2C canned corn-rinsed

Consome de pollo (green cap)

2 C. Water

Start by putting a pan on medium to high heat and adding the butter once pan is hot. I sauté the rice in the butter for approx 2 mins then add the 2 C of water. I add approx 1 1/2 tbsp of consomé de pollo (or to taste) as well as the 1/2 can of corn. Lower heat and let rice simmer. Let it cook for approx 15/20 mins. Enjoy 😃🌻
