Ok so I know artichokes can be intimidating but this Instant Pot recipe seriously couldn’t make it any easier- they’ll be done in no time.
Just grab the following:
1-4 artichokes
1.5 cups of water for a 6 quart Instant Pot (2.5 cups for the 8 quart pot, or 1 cup for the 3 quart pot)
And here's how to make it with the beauty of an Instant Pot:
-Cut off stem, any dry outer leaves, and 1-2 inches off the top of your artichoke(s)
-Add 1.5 cups of water to the inner liner of the Instant Pot
-Place the steamer basked in the pot and add your artichoke(s)
-Set the steam release knob to the Sealing setting
-Press Pressure Cook then the + or - buttons to select the appropriate cook time (10 min for small artichokes and 15-25 min for medium/large artichokes)
-After cook time is complete, do a Quick Release of the steam by setting the steam release knob to the Venting setting
-Cut the artichokes in half (You’ll know they’re done when a knife easily glides through them)
-Remove the choke (fuzzy part) by scooping it out with a spoon- you do NOT want to eat this part
-Enjoy with your favorite dip!
