Keto Cookies 'n Cream Cheesecake Ice Cream, Keto Ice Cream

No churn ice cream

Ice cream Ingredients

1 cup of plain cottage cheese

1 cup of ricotta cheese

6 oz of whipped heavy cream

1 tbsp of vanilla

1/2 cup of powdered sweetener @swervesweetie

Blend everything in a blender and pour into a bowl and freeze.

Cookies Ingredients

1/2 cup of keto flour or almond flour

1/2 stick of melted unsalted butter

1/3 cup of granulated sweetener

Pinch of salt

1/4 tsp of baking soda

1 large egg

1 tbsp of vanilla

Preheat your oven to 350° This should make 12 cookies to make 6 sandwich cookies. Bake for 8-10. Let cool before adding icing.

Icing ingredients

1/2 cup of powdered sweetener (Swerve)

2 tbsp of heavy cream

Assemble cookie sandwiches.

Once cookie are done, break them up and mix them into your ice cream. Continue to freeze ice cream for a few hours.
