Sunday is bake day. Stocking up some bread for weekdays. Today I made " Roti Gulung Keju ". Inspired by Cinnamon Rolls, i tried to subs the cinnamon filling with grated cheese and the cream cheese topping with buttercream and (more) grated cheese. sound like indo roti jadul keju, right ? So here's the recipe.


Bread base :

310 g - High Protein Flour

20 g - Milk Powder 

40 g - Castor sugar 

220 g - Liquid (weigh 2 egg yolk and the rest is milk) 

5 g - Yeast ( always check if your yeast is still active/alive)

3 g - Salt 

55 g - Butter (unsalted)


Filling 

76 g - Butter 

120 g - Cheddar Cheese (grated - set aside keep refrigerated)

70 g - Easy Melt Cheese (grated - set aside keep refrigerated)


Topping 

50 g Butter - melted (to brush the bread right after they come out the oven)

buttercream (I'm using ready to use Hollmann buttercream and I added condensed milk to give sweetness )

grated cheese 

 

1. mix all the dry ingredients ( flour and milk powder) in a bowl of standing mixer. set aside.

2. put sugar, yeast milk and egg yolk in a bowl and mix well. set aside 

3. pour the liquid  ingredients into the dry ingredients and start to mix the dough using the dough hook. mix until well combined (setengah kalis) .

4. add in the salt and butter. mix again until the dough comes clean from the side of the bowl. or until you reach the window pane test. 

5. transfer the dough to floured surface and shape it into a ball. put dough into a greased bowl and cover with plastic wrap and let it rest for 45 mins or until double in size.

6. knock as much air from the dough and transfer it to floured surface shape again into a ball and let it rest for 10 mins.

8. after that, roll the dough into a rectangular shape (20x30cm). Spread the butter (for filling) and scatter the cheese on top of it. 

9. roll the dough until you get a log. cut the log with threads or knife into 12 rolls. place it in a 20x30 cm pan. (don't forget to grease the pan with butter). 

10. Cover the dough with plastic wrap and let the dough rest for 1 hour. 

11. bake the dough at the preheated oven (180° C) for 25 - 28 mins. 

12. After come out the oven, brush the cheese roll immediately with melted butter let it cool completely. 

14. After that spread the buttercream on top of the rolls and sprinkle it with tons of cheese.  ✌️
