Ingredients

For the Chicken:

1 1/2 lb chicken breast (3-4 pieces, about 1 inch thick)

2 tablespoons olive oil

2 garlic cloves, minced

1/3 cup grated Parmesan

1/3 cup breadcrumbs (Italian or plain; add 1 tsp Italian seasoning if using plain)

1/2 teaspoon cracked black pepper

1/2 - 3/4 teaspoon sea salt

For the Potatoes:

2 lb red potatoes, cut into bite-sized pieces (quarter small potatoes, or cut larger ones into sixths or eighths)

1-2 garlic cloves, minced

2 tablespoons olive oil

2 tablespoons grated Parmesan

Salt and pepper to taste

For the Green Beans:

1 lb fresh green beans, ends trimmed

1 tablespoon olive oil

1 garlic clove, minced

1 tablespoon Parmesan (optional)

Salt and pepper to taste

Instructions

Preheat Oven: Set your oven to 425°F (220°C). Line a sheet pan with parchment paper or spray with cooking oil for easy cleanup.

Prepare the Potatoes: In a medium bowl, toss together the potatoes, minced garlic, olive oil, Parmesan, salt, and pepper until evenly coated. Spread the potatoes on one-third of the sheet pan and bake for 10-15 minutes. If you prefer crispier, browned potatoes, leave them in for an additional five minutes.

Prepare the Chicken: While the potatoes are roasting, use the same bowl to combine the chicken, olive oil, garlic, Parmesan, breadcrumbs, salt, and pepper. Coat the chicken pieces evenly.

Add Chicken to the Pan: Remove the pan from the oven and add the seasoned chicken next to the potatoes. Return the pan to the oven.

Prepare the Green Beans: In the same bowl, toss the green beans with olive oil, garlic, Parmesan (if using), salt, and pepper. After the chicken has cooked for about 10 minutes, add the green beans to the sheet pan alongside the chicken and potatoes.

Finish Cooking: Bake everything for another 25 minutes or until the chicken reaches an internal temperature of 165°F (74°C). If you want extra crispy potatoes, turn on the broiler for an additional 4-5 minutes at the end.

Serve: Let everything cool for a few minutes, then serve and enjoy!
