My new favorite dish so quick and easy!
The first time I made this dish I ate it with bread.
This time I put it over rice and it was so good.
You can also pair it with pasta, which I will prob make next.
I have been making this dish once a week and still crave it.
It took me 10 or less mins to make.
Ingredients
-2 Tbsp unsalted butter- I use Trader Joe's vegan butter
-4 cloves garlic minced
-1/2 Tsp each; salt, pepper, crushed red pepper flakes , & oregano.
-1/2 Cup sun dried tomatoes chopped.
-1 cup vegetable broth
-2 15oz can chickpeas
-1 cup heavy cream- I use ripple non dairy half & half
-1/2 cup grated Parmesan
-2 Tbsp basil chopped
-First heat up butter, seasoning & garlic. 2 mins.
:l-Next add sun dried tomatoes, ( I cook these for a few mins then add vegetable broth & chickpeas.)( don't forget to rise and drain chickpeas)
cook for 5 mins.
-Then add in heavy cream,basil & grated Parmesan.
Alll done, serve with pasta, rice , or just bread.
