Bacon Potato Salad Recipe

This is such a great side dish or appetizer! I especially love it in the summer with BBQ pulled pork or grilled chicken. Once the potatoes cook, it is super quick and easy to make.

Ingredients

1 pound red potatoes, sliced in half

3 pieces crispy bacon

1/4 cup Ranch dressing

Chopped green onions

Salt and pepper, optional

First, boil the potatoes until fork tender but not mushy.

Once cooked, rinse with cold water. Pat dry.

In a bowl, add all of the ingredients.

Very gently mix together until the potatoes are coated in dressing.

Season with salt and pepper as desired.

Serve immediately or chill for up to 24 hours.
