Ingredients:
• 1 cup cottage cheese
• 1/4 cup Greek yogurt
• 1 cup roasted corn
• 1 tbsp lime
• Cumin, garlic powder, chili powder, paprika, pepper, salt, cayenne powder
• Sweetener (white sugar or honey)
• Chopped Jalapeños (optional)
• Cojita cheese (optional)
Directions:
1. On the stovetop, cook 1 cup corn with a little bit of oil until golden or blackened (up to you).
2. In a bowl (or blender, if you do not have an immersion blender) combine 1 cup cottage cheese, 1 tbsp lime, and 1/4 cup Greek yogurt, and a small amount of sweetener (I used a small squeeze of honey). Blend until smooth.
3. Generously add the seasonings. The amount of cayenne you add will determine how spicy it is. Blend again if needed.
4. Add in the roasted corn. Mix well. Optionally, add in chopped jalapeños and top with cojita cheese.
5. Serve with chips, vegetables, or protein chips. Enjoy!
