Good morning! Let’s have breakfast.

Ingredients:

• Can of coconut milk

• Chia seeds

• Honey

• Greek yogurt

• Fruit (frozen or fresh)

Granola (optional)

Directions:

1. Combine coconut milk with chia seeds in a lidded container. I used 4 and 1/2 tablespoons for a 13.5oz can of coconut milk. You can separate the mix now, as I did in the pictures, or you can do this later. Mix and let chill in the fridge overnight (or at least for a few hours)

2. Once the chia seeds have formed a pudding, separate them into smaller containers if you haven’t already. Top them with fresh or frozen fruit. Store in the fridge until you’re ready to eat.

3. When you’re ready to eat, top with Greek yogurt, honey, and granola. Enjoy!

Additional tips: You can store the yogurt in the individual parfaits ahead of time, but I find that the ingredients in Greek yogurt separate over time, leaving the parfait watery.
