No Sunday dinner is completed without Rice and Peas in a Jamaican household. I wouldn’t call it a quick dish but it is easy to make and worth the effort 🥰.
✨✨Ingredients✨✨
- 3/4 cup Dry Red kidney beans
- 1 can Goya Coconut Milk
- 2 cups of Basmati Rice
-4 cups of water
- Salt
- Fresh Thyme
- Fresh Scallions/Green Onions
- 2 Tbs Minced Garlic
✨✨How To✨✨
-Rinse with water and soak the kidney beans in water (enough to cover the peas) for 1-2 hours or overnight.
-In a stock pot or sauce pot, add 4 cups of water and the garlic. Then add the soaked beans to it- you can add the remaining water from the peas as well. The water with the garlic does not have to come to boil before doing this. Cover with a lid - medium to high heat.
-Let the peas cook. When the peas start to float, add some water to ‘sink’ them. Depending on the peas- it can be done in 30-45 mins. Test a pea by trying to mash it with your finger/fork- if it makes easily it's ready for the next step.
- DO NOT BURN the peas. Remove the lid and let the majority of the water reduce- to about 1 cup of water. Do not drain or rinse.
- Add the coconut milk - it will be separated in the can but that's fine. Stir the pot and half close the lid. When it starts to boil add salt. Start with a teaspoon, stir, and taste the broth. Add more salt in teaspoon/ 1/2 teaspoon increments and taste as you go along. This will dictate how your finished dish turns out.
✨Rule of Thumb: If it tastes like something you’d drink/eat by itself, then it's good to go.✨
- Add the chopped scallions and chopped Thyme then lower the heat to medium and cover the pot for another 5 mins. Rinse rice with water until the water is clear.
- Add the rice to the pot and stir the pot to level the rice. Check to ensure that 1 index finger joint of liquid is covering the rice - instead of sticking my finger in there, I use the end of a fork that I marked.
✨ If there's too much liquid, add more rice. If there isn't enough liquid, add more water and adjust the taste depending on how much water was added.✨
✨ If cooking more than 3 cups of rice, use another can of coconut milk and 1/2 cup less water in the pot before adding the coconut milk.✨
- Cover the pot and monitor it. When the liquid is reduced, stir the pot. Then reduce the heat to low, wet half of a large ziplock bag or use aluminum foil or place a small bowl of water inside of the pot to steam the rice with a closed lid. Check every 10 mins for 30 mins to ensure that the rice isn't burning.
- When the rice is cooked, remove your steamer and turn off the heat. Serve and enjoy!
