This high protein pasta salad is easy to meal prep, balanced and delicious!🥗
Macros:
443 kcal
30 g of protein
38 g of carbs
20 g of fat
Ingredients:
- Gf pasta (I’m using jovial)
- 1/2 English cucumber, chopped 135g
- Chopped cooked chicken (I used 12 oz)
- 1 cup tomatoes, chopped 145g
- 1/4 cup red onion, chopped
- 2 tbsp fresh dill, chopped
- 1.5 oz. feta cheese
- 2.25 oz. can of sliced Klamata olives drained
- salt and pepper to taste
Dressing:
- 1/4 cup extra virgin olive oil
- 4 tbsp of lemon juice
- 2 tbsp. red wine vinegar
- 1 tsp of oregano
- 1 tsp of garlic powder
- Salt to taste
Method:
* Whisk together dressing ingredients.
* Cook pasta according to package directions. Let cool or Rinse under cold water.
* Cook chicken 5-8 minutes a side or if you like it more tender sear the chicken on both sides and add inch of water and boil for 8-10 minutes. Chop and set aside.
* Combine all ingredients in a large bowl. Add dressing and toss.
* Refrigerate at least 2 hours before serving.
