These shrimp ceviche tostadas are so delicious, high in protein and very quick to make.
10 oz.Of Shrimp cleaned
1 Avocado, diced small
1/4 Cup diced Red Onion
1 Small diced Jalapeño 🌶️
1 Tomato diced
1/4 Cup Fresh Cilantro diced
2 lemons juiced (3 if you really love lemon)
1-2 Tbsp avocado Oil
1/4 tsp Salt
1/4 tsp Pepper
Bring a pot of salted water to a boil, add shrimp and cook for 2 minutes until shrimp are pink with opaque
Remove from the water with a slotted spoon and place in an ice bath for 5 mins to stop cooking process
Preheat oven to 400°F and drizzle 2 tbsp of avocado oil on a baking pan
Rub both sides of the tortillas in the oil, sprinkle with some salt, and bake for 5 minutes on the first side, flip and bake for 2-3 more minutes or until golden brown and crispy
Slice the shrimp into small pieces and place in a bowl with the ingredients for the ceviche
Top the tostadas by adding the ceviche on top with some more cilantro, lemon or hot sauce !
