I recently had this thai chicken salad while out with the fam the other day and my life was forever changed so I knew I needed to make a version to share with all of you! This is honestly so easy to meal prep and comes together in less than 30 minutes. I actually prepped this for myself this week and it was in fact such a great gift to give to my future self haha
heres what you need:
for the peanut ginger sauce:
-3 tbsp creamy peanut butter
-3 tbsp coconut aminos
-1 tbsp maple syrup
-1 tbsp rice vinegar
-2 tbsp lemon juice
-3 garlic cloves, crushed
-1 tsp ginger, finely grated
-1/4 tsp salt
-1 tsp chili flakes
for the salad:
-greens mix (I used an iceberg lettuce mix)
-a few handfuls of purple cabbage
-shredded carrots
-1 cup shelled edamame (I bought mine frozen and boiled it in water for 10 minutes!)
-1 1/2 cups cooked quinoa
-1/3 cup cilantro, chopped
-1/3 cup green onion, chopped
-1 rotisserie chicken, sliced into strips
-sesame seeds (for topping)
directions:
prepare the dressing by adding all of the ingredients to a bowl and whisking until smooth. Add all of the salad ingredients (minus the chicken and sesame seeds) to a large mixing bowl and mix until everything is well combined. Transfer amongst 4-5 takeaway containers and place the chicken and sesame seeds on top of each. Add a little container for the dressing in each salad and there you have it! 😋
