Heya Everyone! Just a little post here for you all to see some of my daily life happenings! If you have been following me for a while you know that as part of my budget I use my food pantry to feed my family. Today was a fantastic take home of lots of fresh grown veggies! I am so ecstatic that winter is coming to a close and that vegetables are making their way back to the pantry!
I got a grocery bags worth of whole broccoli (stem leaves and florets) I got 1lb of walnuts (a common item I get that I am eternally grateful for. Two yellow squash, 3 sweet corn, and about 4-5 bunches of celery (not photo’d)
Last week I got 4 heads of lettuce from the pantry and decided it was time to use them. (Unfortunately some of the leaves were bad so I ended up blending them and putting them in my compost with a forgotten bag of carrots lol.)
So with the lettuce chopped and the other veg processed for easier use this week I got ready to do the rest of the prep. Earlier in the winter I processed a whole pumpkin and saved the seeds, and today I roasted them as a crunchy topping to the salad. I roasted the broccoli stems as well and prepped 3 lbs of walnuts for making walnut butter! It’s such an easy recipe and its changed out world. With the celery and pb I can easily make myself a healthy snack for work and I even got raisins from the pantry.
I also made my very popular fridge pickles in both regular dill and spicy dill they never last long in my home. Oh and I cant forget the bread crumbs! My saving hack is to save the bread ends from the bags and freeze them and when I get enough toast them all in the oven and then a quick pulse in the food processor and I have bread crumbs with the “unwanted” part of the bread loaves we get. Other than that I got a good amount of oranges that I want to try to dehydrate for the first time and beans and lentils which are a household staple.
With my food budget I was able to splurge and I got some sausages from the dollar tree both hot and polish. I also got a dozen eggs for the next week or so. Amazingly enough I also got some bags of cookie mix for .68¢ a bag so I got the last 6 they had available. They are dairy, gluten and nut free! 🤩
