MALAXIANGGUO 麻辣香锅

Mala xiang guo is a spicy and tongue-numbing dish that originated from the Tujia people of Jinyun Mountain in Chongqing, China. "Ma" meaning tongue-numbing and "La" meaning spicy.

This dish is savoury and spicy, strongly flavoured with mala (Sichuan red pepper corn), and it often contains meat and vegetables. The preparation process involves placing the required ingredients in the pot, stir frying and adding seasoning. In restaurants, customers usually choose the ingredients (meat and vegetables) by themselves before the chef prepares the dish.

I made this with ready made Malaxiangguo seasoning from Hai Di Lao, and it was so addictive! The best part? It's super easy to make! Btw, the packaged seasoning taste like the real thing!

Ingredients:

Meat and vegetables of your choice

I used:

Tofu skin

Prawns

Enoki mushrooms

Wood-Ear mushrooms

Luncheon meat

Lotus roots

Carrot

Cabbage

Potato-starch glass noodles

Instructions:

Cook all the ingredients beforehand to 80-90% cooked and set aside.

In a wok, heat some oil and fry sliced ginger and smashed garlic until fragrant. Followed by the packaged seasoning.

Then add in all the ingredients, one by one, from the one that take longest to cook to the fastest. I added prawns first, followed by solid vegetables, then the rest of the ingredients, adding the noodles last so it wont get mushy.

Ready within a few minutes and get ready to devour them~
