Butterscotch Bars! 🧈

Don’t you agree that BUTTERSCOTCH is such an underrated baking ingredient!? I am here to give it a big comeback! 🍪

Nick DiGiovanni has a recipe for butter toffee bars, but I had this idea of using butterscotch chips here to make these insanely good Butterscotch Bars! 🧈

My oh my were these butterscotch bars excellent! Definitely give this a whirl and let me know what you think! 😋

Ingredients 🛒

• 1/2 cup unsalted butter, room temperature

• 1.5 cups flour

• 2 tsp baking powder

• Pinch of kosher salt

• 1 cup sugar

• 1/2 cup brown sugar

• 2 eggs, room temperature

• 1 tsp vanilla extract

• 1 cup butterscotch chips

Directions ✍️

• Preheat oven to 350F.

• Butter a 9x13 inch baking dish.

• Into a medium bowl, sift the flour, baking powder, and salt.

• Take out a stand mixer and add the paddle attachment. Beat the butter, sugar, and brown sugar together until creamy. Add the eggs and vanilla and mix together.

• Slowly add the dry ingredients while the mixer is on running until combined. Stir in the butterscotch chips.

• Pour the batter into the buttered pan and spread to an even thickness.

• Bake for 30 minutes.

• Allow the bars to cool for at least 10 minutes before slicing into squares.

• Serve up and enjoy!
