the strawberries in the muffins make them SO soft & burst with flavor! it took self control to not indulge of all of the muffins πŸ˜…

RECIPE :

β–’ 1 Β½ cups strawberry yogurt (I use light greek yogurt)

β–’ 2 large eggs (at room temperature)

β–’ Β½ cup unsalted butter (1 stick or 8 tablespoons butter - melted and cooled)

β–’ 1 teaspoon vanilla extract

β–’ Β½ teaspoon salt

β–’ 1 tablespoon baking powder

β–’ Β½ teaspoon baking soda

β–’ 1 cup sugar

β–’ 2 cups all-purpose flour

β–’ 1 cup strawberries (fresh, sliced)

1) preheat oven to 375Β°F & prepare your muffin tin.

2) in a large mixing bowl, combine the strawberry yogurt with eggs, melted butter, and vanilla extract until smooth.

3) add the salt, sugar, baking powder, and baking soda to the yogurt mixture and mix well.

4) add the first 1 Β½ cups portion of flour and mix until just combined. use the remaining Β½ cup and place the sliced strawberries into a plastic ziploc storage bag with the Β½ cup of flour. Seal and flip or turn to coat the berries.

5) once the sliced strawberries have been coated with flour, gently fold the berries into the mixed batter.

5) spoon the batter into my muffin tin making sure each is about 2/3 full.

6) bake for 20 minutes or until a toothpick comes out clean! enjoy!! πŸ’—πŸ“πŸ’­
