❤️🔥 “Soul-warming” is a big promise – but it’s a promise this tortellini soup recipe can fulfill! I continue to say – I love lazy ways to impress people. The easy clean-up of one-pot meals makes this recipe fall into the “lazy and impressive” category (at least in my brain it does, ha!).
This recipe reheats very well, making it a great meal prep option for the whole family to enjoy throughout the week. It’s also perfect for a busy weeknight. The formula for the best weeknight recipe is:

I may not be Italian, but I sure strive to cook like one! You may know that I am the creator of a globally inspired salt-free spice company. When I came up with the idea, an Italian blend seemed like an obvious addition. However, as a new spice company – I really wanted to stand out. Since the spice market already has many Italian seasoning options, I wanted to bring something new to the market that no other company was doing (mission accomplished!). 🍽️ Ingredients:
1 tbsp olive oil
1 lb Italian sausage
1 onion, chopped
3 stalks celery, chopped
4 cloves garlic, minced
1 8.8 oz package of cheese tortellini
32 oz chicken broth
1 28-oz can fire-roasted diced tomatoes
1 tbsp Italian Seasoning
salt & pepper, to taste
1 cups kale, chopped
4 tbsp shredded parmesan cheese, for serving
🍽️ Instructions:
1. In a large pot over medium heat, add the oil and the Italian sausage. Sautee for 5-7 minutes or until the sausage is no longer pink.
2. Add in the onion and celery. Sautee for an additional 3-5 minutes or until the onions become translucent.
3. Add in the garlic and sautee 1 additional minute.
4. Add in the tortellini, chicken broth, fire-roasted tomatoes, and Italian seasoning. Add salt and pepper to taste. Bring to a boil, reduce to a simmer, and cook for about 5 minutes.
5. In the last minute of cooking, add the kale and stir it into the soup. It should soften and turn bright green.
Serve hot with parmesan cheese. Enjoy!
