These are the easiest, most delicious oatmeal chocolate chip cookies quite literally ever and they are really good with GF flour too!!

Ingredients:

3/4 cup unsalted butter, browned and cooled

1 cup brown sugar

1 egg + 1 egg yolk

2 teaspoons vanilla extract

1 1/3 cups all purpose flour

1/2 teaspoon salt

1/2 teaspoon baking soda

1 cup old fashioned oats

1 cup chocolate chips

Steps:

1) brown the butter until it’s a light golden color and remove from heat. Let it cool 30 minutes or so until you can touch it and it’s not hot. Warm is fine!

2) mix the brown sugar and browned butter until it comes together and then add the egg and egg yolk and vanilla. Beat until well combined.

3) add flour, baking soda, and salt until well mixed and then add the oats. When that’s all combine, add the chocolate chips. I like to use a mix of regular sized and minis!

4) cover and refrigerate for at least 30 minutes.

5) when you’re ready to bake, preheat oven to 350 and line a baking sheet with parchment paper and put dough balls on the sheet about 2 inches apart. I usually fit 9 cookies per tray and use a 1 ounce cookie scoop.

6) bake for 11 minutes and pull them out! They will look underdone but will keep baking on the sheet!! After 5 or so minutes, transfer to a wire rack and let them cool completely ( or if you’re impatient like me, don’t)
