this is super easy to throw together in less than 15 minutes!
what you'll need:
- one box silken tofu
- mushrooms (you can choose enoki, oyster mushrooms, eringi...)
- prawns (I used about 150g)
- vegetables of choice ( I used xiao bai cai)
- 2 eggs
- seasoning to taste
instructions
1. cut tofu into cubes and warm up in a pan over medium heat
2. cut mushrooms and add to saucepan
3. assemble prawns (fresh or frozen thawed) on the tofu/mushrooms. I also added scallops for a treat
4. beat 2 eggs and lightly season with soy sauce. pour beaten eggs over the ingredients in the pan.
5. add vegetables
6. cover and cook on low-medium heat for 5-7 minutes
7. uncover and it's ready to eat! some suggestions for seasonings: yuzu kosho, LGM. you can even add miso!
