😋 Blueberry Cream Cheese Egg Rolls 🍰
Sweet and tangy blueberry cream cheese egg rolls, deep-fried to perfection!
Ingredients:
2 cups fresh blueberries
⅓ cup sugar
1 tablespoon lemon juice
7 tablespoons water, divided
3 tablespoons cornstarch
8 oz cream cheese, softened
¼ cup sugar
1 teaspoon vanilla extract
1 tablespoon lemon juice
Egg roll wrappers
Powdered sugar (for dusting)
Directions:
Prepare Blueberry Filling:
In a small saucepan, combine 2 cups blueberries, ⅓ cup sugar, 3 tablespoons water, and 1 tablespoon lemon juice.
Cook over medium heat until blueberries burst, about 3-4 minutes after boiling.
Mix 4 tablespoons water with 3 tablespoons cornstarch, then add to the blueberry mixture.
Stir until thickened, remove from heat, and let cool.
Prepare Cream Cheese Filling:
In a medium bowl, beat 8 oz cream cheese until fluffy (2-3 minutes).
Add ¼ cup sugar, 1 teaspoon vanilla extract, and 1 tablespoon lemon juice.
Beat for an additional 2 minutes.
Assemble Egg Rolls:
Place a couple of tablespoons of cream cheese mixture in the center of each egg roll wrapper.
Add a heaping spoonful of blueberry filling on top.
Wet the edges of the wrapper with water to seal.
Fold in the sides and roll tightly.
Cook Egg Rolls:
Heat oil in a skillet to 375°F.
Fry egg rolls in batches until golden brown, a few minutes per side.
Transfer to a paper towel-lined plate to cool.
Serve:
Dust with powdered sugar before serving.
