Sooo, I’m 8 months postpartum and still exclusively pumping while trying to lose weight. I tie those together because I know I need lots of nutrients, get full, and still enjoy my food. I’m on a postpartum weight loss journey so here is a dish I mad.
It was a quick and easy. Didn’t realize it was vegan until I finished cooking. As mentioned, I’m trying to eat better after my pregnancy and getting back to a healthy weight. My husband/ family are along for the ride lol. This dish was really good and filling.

Occasion & Servings: Lunch / 4 Servings (plus some left overs)
Ingredients: Quinoa, Brussels sprouts, brocollini, sweet potatoes, zucchini, chickpeas, salt, pepper, olive oil
Detailed Steps: cook quinoa, bake Brussels sprouts, brocollini, zucchini, sweet potatoes and air fry chickpeas. For each vegetable I seasoned with olive oil salt pepper and laid them on a cooking sheet. I went easy on the salt (trying to be healthy-er) for the chickpeas I added paprika for a Smokey flavor.
Additional tips/notes: I made a really yummy sauce to spread all over the dish. In a saucepan I mixed the following:
• 1 cup Dijon mustard
• 1 cup tahini
• 1 cup water
• 0.5 cup apple cider vinegar
• 4 tablespoons maple syrup or to taste
• 4 tablespoons lemon juice
•Salt and freshly ground black pepper
