Steps:
1. Prep your shrimp (clean & devein).
2. Season them with cajun seasoning, paprika, black pepper, pinch of sea salt, & drizzle two tablespoons of extra virgin olive oil.
3. Chop a handful of sweet cherry tomatoes in half & also chop up two handfuls of fresh spinach. Add to a medium size pot with a tablespoon olive oil & 1/4 cup of water. Allow this to cook down for about 10 minutes.
4. While this is cooking , add your jumbo shell pasta to a large pot with two tablespoons of oil and cook on medium heat to let them soften (do not overcook them). Cover with a lid for 7-10 minutes then drain the pasta.
5. After this you can now add your shrimp to the tomatoes & spinach and let them cook together for 6 minutes covered with a lid.
6. Now that your shrimp is ready, add in a full 16oz jar of Alfredo sauce, half cup of heavy whipping cream, two tablespoons of sour cream, two tablespoons of cream cheese, & 2 cubes of mozzarella cheese. Mix well for 2-5 minutes to make sure it all blends together.
7. Add your drained pasta to a flat pan and fill each one with a shrimp & sauce. Layer on some shredded mozzarella cheese & extra Alfredo sauce. Repeat this method twice. Once that is complete, add parsley flakes & a dash of paprika on top. Cover with foil & bake in the over on 350 degrees for about 10 minutes.
8. Plate your pasta & enjoy with a side of your favorite green vegetable!
