i got rid of my last crockpot a while ago and my mom recently gifted us this one because she thinks it’s silly i stay up late to cook for my bf every night 😂tonight’s dinner was sooo easy, chili and cornbread. i’m growing my own green onions so that will go on top with some shredded cheese!
ingredients:
•ground beef— i bought 10 burgers for $10 on labor day but we only used four and saved the rest, so i used those!
•half a green & half a red bell pepper, diced
•diced onion— i used red because i had it prepped but i would typically use yellow or white
•minced garlic & seasonings of choice
•one can mild chili beans (not drained)
•1/2 can baked beans (not drained)
•one can diced tomatoes (not drained)
•1/2 can tomato sauce
•cornbread mix of choice
recipe:
-sautee onions, peppers & garlic. add beef and cook until no pink shows. season your meat! in a small bowl i combined: chili powder, adobo, seasoned salt, ground red pepper, meat tenderizer, dan-o’s, salt and pepper, & paprika and seasoned my meat with half of this mixture. you can add 12 oz of beer and let simmer until most of the liquid cooked out here, i just didn’t have a guinness to add!
-to your crockpot add your beans, tomatoes, tomato sauce, and the rest of the seasoning mix. drain the grease from your beef then add to the crockpot. cook on high for 4 hours.
-mix your cornbread as directed by package. add 1 tbs sugar to mix and bake as directed. when golden brown, top with butter and brown sugar and broil until caramelized.
