The most delicious, plant based, flavorful dinner.
This was the first thing I ever cooked for my boyfriend a little over a year ago and he has been hooked on my cooking ever since.
The last day of every month, we treat ourselves to a little date night with this meal. Every time I post the meal I get so many recipe requests so I finally decided to document it.
Let me know if you try it!
Recipe:
• Preheat oven to 375
• Cut squash in half and scoop out the guts.
• Put fresh garlic with a little bit of oil (I like avocado oil) and salt into tinfoil.
• Garlic goes in first for 45 minutes, add the squash in at 30 minutes.
• Sauté 1/2 and onion (I prefer red) until soft
• Add in 1/2 bag of spinach, chopped & 3/4 can artichokes.
• Scrape the squashes with a fork to produce spaghetti like strands.
• Add in garlic, spaghetti squash, cheese (I used about 1/2 cup) and a splash of the artichoke juice.
• Stir until cheese melts (I used daiya mozzarella)
• Top with nutritional yeast & red pepper flakes to your desire.
• Serve with garlic bread & Enjoy!
