Easy Purple Sweet Potato Ball Recipe!

Ingredients required to make around 22 sweet potato balls:

1 Purple Sweet Potato (around 260grams)

Tapioca Starch (86g)

Sugar (43g) - If you prefer less sweet, can cut down on the sugar portion

Golden ratio to follow for the recipe = 6:2:1= sweet potato : tapioca starch : sugar

Instructions:

1. Steam sweet potato for around 15mins., before mashing it up and mixing in sugar

2. Mix in the tapioca starch. Mix well and start kneading.

3. Keep kneading until you can roll the dough into a long line. Proceed to chop off pieces and roll them into ball shaped size

4. Fry them in a full pan of oil (Tip: Press down the ball around 3 times when frying to make the ball puff up to a round shape. The ball will float up when it is cooked)
