Garlicky, herb infused shrimp grilled to perfection! A summer favorite, but itβs delicious during ever season tbh. Perfect to serve along with some warm pasta, toasty bread, or any other main dishes.
- 1 pound of medium or large shrimp
- 1/4 cup good olive oil
- 4 garlic cloves, finely chopped
- 1/4 cup mixed herbs (I did parsley and cilantro)
- 1 tablespoon lemon juice (1/2 large lemon, use other half to squeeze over after cooking)
- 1/2 teaspoon salt
- 1/4 black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon red chili powder or cayenne powder
Directions:
1. Clean the shrimp and pat dry. In a bowl, add the shrimp, olive oil, garlic, herbs, lemon juice, and spices.
2. Mix well and let it marinate for 30 minutes to 2 hours, no more than that.
3. On a grill or grill marked cast iron skillet, cook the shrimp on each side for 3 to 5 minutes depending on the size. Brush the marinade as they cook. Make sure not to over cook!
4. Finish by squeezing some fresh lemon juice. Serve immediately, enjoy!
