having to take care of your meals at uni means cooking all day every day (eating out is too expensive), and i have slowly developed the skill of quick cooking with my favourite 20-min jap egg curry udon!!
the recipe is pretty simple:
- any leftover veggies + meat or tofu
- curry tablet
- dashi stock/water (i made a simple fish stock)
- egg
- packet udon
- onions
- spring onion (to top it off)
time to cook —
- boil some stock/water in a saucepan
- sauté sliced onions until soft (i used sesame oil for extra fragrance), then add your veggies (either into the pan or the stock)
- melt the curry tablet in a ladle of stock and then pour it into the pan on onions
- on the side, pour hot water over your udon noodles and sit for 3 minutes before draining
- add your egg into the curry and break the yolk + stir
- add your udon and mix it all up
- plate it with spring onions to top it off and that’s literally it!!
definitely rate this one a 4/5 (-1 because i had no leftover meat), it’s such an easy meal especially on days where i need to whip up something quick and delicious !! try it for yourself 🫶🏻
