Shrimp: 🍤
Marinade in
-1 tbsp olive oil
-1 tbsp smoked paprika
-1 tsp onion powder
-1 tsp garlic powder
Marinate for a few hours before sautéing in olive oil on each side for about 2-3 minutes or until done
Mango Salsa: 🥭🥑🌶️🧅
-2 large mangos
-1 small avocado
- 1/4 red onion
- 3 tbsp chopped cilantro
- 1 spicy pepper of choice
- 1/2 red bell pepper
- juice of 1 lemon or lime
- salt and pepper to taste
Chop everything up the same size and mix together
1/2 and 1/2 rice: 🍚
Half part cauliflower sautéed briefly in olive oil
Half part white rice (which was frozen and I’m so excited to learn that left over rice can be frozen)
I love doing this rice with dishes to lower the amount of carbs and add in a veggie. Since mangos are pretty sweet, it works for balancing blood sugar a little more
Not toddler approved. The texture wasn’t for him. But my husband went for seconds. Still a win
