This has easily become one of my favourite go to meals to make when Iโm too busy or too lazy to think about what I want to eat. It can easily be prepared with freezer food, is super healthy, and it only takes less than 10mins! Itโs a perfect healthy and quick meal.
๐๐ฒ๐ ๐ถ๐ป๐ด๐ฟ๐ฒ๐ฑ๐ถ๐ฒ๐ป๐๐:
๐ Millet (Iโm using the organic hulled millet from Origins)
๐ Cubed Pumpkin (I always freeze a bag of cubed pumpkins and it saves me a lot of time when I need to whip up a quick meal)
๐ Kimchi
๐ Other ingredients of choice
๐๐ถ๐ฟ๐ฒ๐ฐ๐๐ถ๐ผ๐ป๐:
๐ Start by boiling a pot of water, not too much unless youโd prefer a watery porridge
๐ Once water is brought to a boil, add pumpkin and millet in to cook
๐ Once cooked till soft, start smashing and mixing the pumpkin within the pot
๐ Add any other ingredients of choice
๐ Lastly, remove from heat and add kimchi and kimchi juice in to stir
๐ And voila! Your kimchi pumpkin porridge is done.
I usually make this for lunch and it requires minimal effort and time and keeps me full till dinner. Millet is also a healthy alternative to rice with great source of protein and fibre.
