This has easily become one of my favourite go to meals to make when Iโ€™m too busy or too lazy to think about what I want to eat. It can easily be prepared with freezer food, is super healthy, and it only takes less than 10mins! Itโ€™s a perfect healthy and quick meal.

๐—ž๐—ฒ๐˜† ๐—ถ๐—ป๐—ด๐—ฟ๐—ฒ๐—ฑ๐—ถ๐—ฒ๐—ป๐˜๐˜€:

๐Ÿ”˜ Millet (Iโ€™m using the organic hulled millet from Origins)

๐Ÿ”˜ Cubed Pumpkin (I always freeze a bag of cubed pumpkins and it saves me a lot of time when I need to whip up a quick meal)

๐Ÿ”˜ Kimchi

๐Ÿ”˜ Other ingredients of choice

๐——๐—ถ๐—ฟ๐—ฒ๐—ฐ๐˜๐—ถ๐—ผ๐—ป๐˜€:

๐Ÿ”˜ Start by boiling a pot of water, not too much unless youโ€™d prefer a watery porridge

๐Ÿ”˜ Once water is brought to a boil, add pumpkin and millet in to cook

๐Ÿ”˜ Once cooked till soft, start smashing and mixing the pumpkin within the pot

๐Ÿ”˜ Add any other ingredients of choice

๐Ÿ”˜ Lastly, remove from heat and add kimchi and kimchi juice in to stir

๐Ÿ”˜ And voila! Your kimchi pumpkin porridge is done.

I usually make this for lunch and it requires minimal effort and time and keeps me full till dinner. Millet is also a healthy alternative to rice with great source of protein and fibre.
