This has easily become one of my favourite go to meals to make when I’m too busy or too lazy to think about what I want to eat. It can easily be prepared with freezer food, is super healthy, and it only takes less than 10mins! It’s a perfect healthy and quick meal.
𝗞𝗲𝘆 𝗶𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
🔘 Millet (I’m using the organic hulled millet from Origins)
🔘 Cubed Pumpkin (I always freeze a bag of cubed pumpkins and it saves me a lot of time when I need to whip up a quick meal)
🔘 Kimchi
🔘 Other ingredients of choice
𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀:
🔘 Start by boiling a pot of water, not too much unless you’d prefer a watery porridge
🔘 Once water is brought to a boil, add pumpkin and millet in to cook
🔘 Once cooked till soft, start smashing and mixing the pumpkin within the pot
🔘 Add any other ingredients of choice
🔘 Lastly, remove from heat and add kimchi and kimchi juice in to stir
🔘 And voila! Your kimchi pumpkin porridge is done.
I usually make this for lunch and it requires minimal effort and time and keeps me full till dinner. Millet is also a healthy alternative to rice with great source of protein and fibre.
