This has easily become one of my favourite go to meals to make when Iβm too busy or too lazy to think about what I want to eat. It can easily be prepared with freezer food, is super healthy, and it only takes less than 10mins! Itβs a perfect healthy and quick meal.
ππ²π πΆπ»π΄πΏπ²π±πΆπ²π»ππ:
π Millet (Iβm using the organic hulled millet from Origins)
π Cubed Pumpkin (I always freeze a bag of cubed pumpkins and it saves me a lot of time when I need to whip up a quick meal)
π Kimchi
π Other ingredients of choice
ππΆπΏπ²π°ππΆπΌπ»π:
π Start by boiling a pot of water, not too much unless youβd prefer a watery porridge
π Once water is brought to a boil, add pumpkin and millet in to cook
π Once cooked till soft, start smashing and mixing the pumpkin within the pot
π Add any other ingredients of choice
π Lastly, remove from heat and add kimchi and kimchi juice in to stir
π And voila! Your kimchi pumpkin porridge is done.
I usually make this for lunch and it requires minimal effort and time and keeps me full till dinner. Millet is also a healthy alternative to rice with great source of protein and fibre.
