My sister begs me to make this all the time because itโs so good ๐
Ingredients:
- 1 1/2 cups non-dairy milk and 1 tsp apple cider vinegar
- 3 cups oat flour
- 2/3 cup cocoa/cocao powder
- 2 tbsp arrowroot powder
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1 1/2 cups applesauce or dairy free yogurt
- 1 1/4 cups coconut sugar
Mix together the milk and apple cider vinegar and leave it for 5 minutes (this is vegan buttermilk). Set the oven to 350F. Grease three 6 inch pans with oil or parchment paper. Whisk together all of the dry ingredients in a medium bowl. In a large bowl, whisk the vegan buttermilk, applesauce/yogurt, and coconut sugar. Add in the dry ingredients and mix until combined. Pour the batter into the pans and bake for 35-40 minutes. Remove the cakes from the oven and allow them to cook for at least 15 minutes.
Frosting Ingredients: (I donโt like a ton of frosting, so double the measurements if you want more)
- 1 cup cocoa powder
- 1/2 cup coconut sugar
- dairy free milk until it becomes a frosting texture
Once cake is cooled, add 1 layer and frost, add 2nd layer and frost, and then 3rd layer and frost. Add whatever toppings you want (raspberries, chocolate, blueberries, coconut, almonds, sprinkles). Enjoy! (I think the cake tastes better when it cools in the fridge for at least a couple hours)
