INGREDIENTS

For the Muffins

1 1/2 cups all purpose flour

1 tsp. baking soda

1/4 tsp. baking powder

1/2 tsp. kosher salt

1 1/2 tsp. pumpkin spice

2 eggs

1 cup pumpkin puree (NOT pumpkin pie filling)

1 cup granulated sugar

1/3 cup vegetable oil

1/3 cup water

For the Crumb

6 TBS. salted butter, melted and cooled

1/2 cup brown sugar

2/3 cup all purpose flour

1 tsp. cinnamon

Preheat your oven to 350Β°F.

In one bowl, mix flour, baking soda, baking powder, salt, and pumpkin spice. In another bowl, beat eggs, then add pumpkin puree, sugar, oil, and water.

Fold dry ingredients into the wet ones with a spatula. Set the batter aside.

For the crumb, mix melted butter (not too hot) with brown sugar, then stir in flour and cinnamon.

Grease or line your muffin tin. Fill each cup halfway with batter, sprinkle some crumb, then add more batter till almost full. Top with more crumb.

Bake for 22-27 minutes, till the center bounces back when pressed. Cool in the tray for 10 minutes, then move to a wire rack. Enjoy!
