Hello Girlies! Today I’m sharing a healthy vegan recipe
It’s simple, delicious and healthy.
Ingredients:
1 cup chickpeas
½ cup grilled corn
¼ cup chopped parsley
Fresh lime
½ cup diced tomatoes
½ Avocado
¼ cup red onions
2 Carb control tortillas
Instructions:
In a mixing bowl, combine the chickpeas, grilled corn, chopped parsley, diced tomatoes, avocado, and red onions.
Squeeze fresh lime juice over the mixture to add a zesty flavor and help bind the ingredients together.
Gently mix all the ingredients to ensure even distribution of flavors.
Warm up your Carb Control tortillas. You can do this by placing them on a dry skillet over medium heat for about 20-30 seconds on each side until they are warm and pliable.
To assemble the tacos, spoon the chickpea and corn mixture onto each tortilla.
Garnish with extra chopped parsley and a drizzle of lime juice if desired.
Serve immediately and enjoy your delicious and nutritious Vegan Chickpea Tacos!
