This is a super easy meal that is so tasty. Very few ingredients and voila.

You'll need:

● 2 russet potatoes

● 16oz tub of Lloyd's BBQ shredded pork

● Shredded cheese, I used Mexican blend

*optional toppings: sour cream, ranch, crema, jalapenos, hot sauce, extra bbq sauce, Chipotle sauce*

1.) The easiest way to cut your fries into the shape shown above is with a mandolin vegetable slicer. I laid a plate down underneath to catch the potato.

2.) Preheat your electric skillet or frying oil to 350°.

3.) Cook potatoes about 10 minutes. 5 on each side. You might have to do this in 2 batches. I did just to keep from overcrowding the skillet.

4.) Drain potatoes on a paper towel lined plate.

5.) Cook Lloyd's pork based on package instructions. It just pops in the microwave.

6.) Top potatoes with cheese and pork. I would suggest seasoning the potatoes for a little more depth of flavor. I seasoned with pepper, salt, and Dan-Os Chipotle. I didn't put my cheese soon enough, and it didn't melt all the way in this photo. If you want more melted top before potatoes are fully cooled. Or toss in the oven for just a couple minutes to keep the fries crispy.
