Winter weather calls for homemade meals! This stuffed pepper soup is one of our favorite cozy, comfort meals!

INGREDIENTS

- 1 pound of ground beef (or turkey)

- 1 1/2 cups Minute white rice

- 1 1/2 cups water

- 3 boxes of Pacific Red Pepper and Tomato Soup

- 2 tablespoons avocado oil

- 6-8 green peppers, chopped

* if I am feeling lazy I pick up 3 containers of the pre-chopped peppers in our local grocery store

* we swap out 1/3 green peppers for a rainbow variety (yellow, orange, red) if we’re feeling more sweet than savory 😋

STEPS:

1. Cook meat first until brown. Drain and set aside.

2. Simultaneously, bring 1 1/2 cups of water to a boil. Once boiling, add Minute white rice to to water. Stir, cover, and remove from heat. Allow to cook for 20 minutes. Fluff with fork once done.

3. Combine 2 tablespoons of avocado oil and peppers in same pan used for meat. Cook for ~10 minutes, until softened.

4. Pour 3 boxes of Pacific red pepper and tomato soup into large soup pot.

5. Add in all ingredients (meat, rice, and peppers) to soup pot.

6. Cook and allow soup to come to a simmer. Once soup is thoroughly heated, remove from heat and serve!

* I like to serve with mini corn bread muffins or a club cracker 😋 *
