I WANTED to like it so much, so I went on a mission to find recipes that I liked. This is the first and omigosh it was such a hit! I am most definitely falling in love with whole grain pasta in 2024.
* 8 oz whole grain penne pasta- cooked and kept warm
* 2 tbsp butter
* 4 plum tomatoes, chopped
* 2/3 c minced shallots
* 2-3 garlic cloves, minced
* 1 pound of shrimp
* 1 tsp kosher salt
* 1/2 tsp black pepper
* 3/4 c heavy cream
* 1 tsp parsley, chopped
1- Melt butter in a skillet over medium high heat. add the tomatoes and cook stirring occasionally about 3-4 minutes.
2- Be sure that your garlic and shallots are minced and add them to the pan. Cook for 1-2 minutes
3- add the shrimp and cook for 2-3 minutes. sprinkle with salt and pepper then stir in the heavy cream. cook for 1-2 min.
4- Stir in the parsley and cooked pasta.
5- serve right away. I’d make this over and over again it’s so good!
